- 1 cup certified gluten free oat flour (or regular oat flour if gluten is not an issue)
- 1 cup organic gluten-free buckwheat flour (or regular buckwheat flour if gluten is not an issue)
- 1/3 cup Progressive Organics Brown Rice Protein
- 1/3 cup organic tapioca starch
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. fine sea salt
- 1 tsp. xanthan gum
- 1 tsp. organic cinnamon
- ½ tsp. nutmeg
Beat wet ingredients into dry ingredient mix to combine. Add enough liquid to create a batter a little bit thicker than pancake batter.
Makes 8–10 pancakes or waffles.
Serve with fresh berries, yogurt & maple syrup.
