INGREDIENTS

  • 1 cup sorghum flour
  • ½ cup Progressive Harmonized Fermented Vegan Protein - Vanilla
  • ¼ cup tapioca starch
  • 1 tsp. xanthan gum
  • 1 tsp. baking soda
  • 1 ½ tsp. baking powder
  • ½ tsp. sea salt
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. cloves
  • 1 cup organic light brown sugar
Wet:
  • 2 large organic eggs
  • ½ cup Organic Coconut Oil
  • ½ cup applesauce
  • ½ cup milk
  • ¼ tsp. lemon juice
  • 2 tbsp. honey
  • 2 tsp. bourbon vanilla
Extras:
  • 2 cups diced apples
  • ½ cup chopped cranberries

      INSTRUCTIONS

      1. Grease and flour a deep 9 in. cake pan.

      2. In a large bowl, whisk together dry ingredients. In a small bowl, mix together wet ingredients.

      3. Add wet ingredients to dry ingredients and stir until combined. Add half the apples and cranberries.

      4. Pour into prepared cake pan and add remaining apples and cranberries, pressing into batter.

      5. Bake in center of oven for 40–50 minutes until toothpick or cake tester comes out clean. Cool on a wire rack.
