1 cup pitted dates

1 cup cashews halved

3/4 cup dried pineapples

1 scoop VegeGreens Pineapple Coconut

2 tablespoons ground chia seeds

2 tablespoons ground flaxseeds
-
2 tablespoons goji berries
-
1/2 teaspoon vanilla extract
-
Optional - shredded coconut
INSTRUCTIONS

Add dates and cashews to blender / food processor. Blend until nuts are finely ground.

Add remaining ingredients and mix until everything is incorporated.

Using the palm of your hand, roll mixture into a 1-inch ball.

If desired, roll some (or all) energy balls in shredded coconut
-
Store in an air tight container in the fridge to enjoy after a workout or for a healthy snack on-the-go.
