    Pineapple Power Bites

    INGREDIENTS

    • 1 cup pitted dates

    • 1 cup cashews halved

    • 3/4 cup dried pineapples

    • 1 scoop VegeGreens Pineapple Coconut

    • 2 tablespoons ground chia seeds

    • 2 tablespoons ground flaxseeds

    • 2 tablespoons goji berries

    • 1/2 teaspoon vanilla extract

    • Optional - shredded coconut

     

    INSTRUCTIONS

    1. Add dates and cashews to blender / food processor. Blend until nuts are finely ground.

    2. Add remaining ingredients and mix until everything is incorporated.

    3. Using the palm of your hand, roll mixture into a 1-inch ball.

    4. If desired, roll some (or all) energy balls in shredded coconut

    5. Store in an air tight container in the fridge to enjoy after a workout or for a healthy snack on-the-go.
